Mushroom Cannellonis 
This is the first recipe (after the smoothies) I did at the beginning of my raw food journey still good to this day :)

Back then I didn't even have slicer, the slices are way too big lols. These days it's easier to roll the things.

Not getting into it but it consist of macadamia ricotta 'cheese', a raw tomato sauce and marinated mushrooms and spinach inside so that everything holds.

Noir Désir

One of the first dessert I did also in the beginning, I'm not a big fan of chocolate, but I was impress with the taste, it's really decadent for a raw chocolate cake, not on the photo there is also a chocolate sirup that goes on top. I will be making a new one soon and will hopefully make look better and in smaller portions too. You keep in the fridge for i think 10 days or you freeze it.

I cut half of it and brought it to my workplace, lols it lasted like 7 min in the kitchen!












Very interesting carrot salad with a curry sauce dried raisins and tiny bits of cauliflower (i had decided to put purple ones instead).
Mandras Salad


Morning Cleansing Juice (mild)

Very good tasting juice, you can had more raisins but don't put too much or you'll get a nasty surprise for at least 2-3 days lols (someone person remembering trying the Holy Grail at Kristina's youtube, kale and a whole bunch of grapes, yikes)

Ingredients
1 big pink grapefruit
2 apples (bio)
1 lemon (bio - cause I kept a big of the skin for a bit of zing)
20 to 24 raisins
2 small red swiss chards with stem
ginger to taste

Blueberry Smootie with Coconut water

So I was finally able to put my hands on Thai young coconuts, very difficult to find where I live and I don't have a car so someone went to Kim Phat in Brossard I believe and brought 2 back for me and I decided to make a smoothie I saw on FullyRaw Kristina at the link here.

First taste was good, but I'm a texture person and I should have stained the result of the coconut water with the almonds because I was never able to have more and a few sip, I just couldn't do it and put the rest of it in ice cubes so I can put it in other smoothies. UPDATE: after doing the recipe again but this time straining the pulp, istill don't like it. I guess i'm not a coconut water fan xD.

It was my first experience opening up that kind of coconut and with the help of a couple of video I had no problem, I was impressed on how much water is in there compared to regular coconuts, interesting fact also the white part is very very thin, no wonder they ask for the meat of 4 or 5 to make something, the taste of the meat is very subtle and you can see the oil on it, very interesting. Tom Yum Soup (or a version of it)

Follow the instructions on this video, that's what I did and let me tell you next time I do this, way way way less spicy stuff, I love spicy and that was too much for me.

Smoothie Pep

1 tasse lait amandes
4 dattes trempées
1/8 tasse Baie Goji
1 poignée de bébé arugula
1 banane
5 feuilles de menthe
pincée de poivre cayenne
10 gouttes de ginko
1 cubes de glace

Done 2 verres à Milshake

Jus d'agrume et carottes

Ben non lulu, c'est pas pour les minous
1 gros pamplemousse rose
 2 oranges
1 citron bio avec une partie du zeste laissé dessus
1 tasse de carottes bio

C Smoothie

Morning all, post will slowly be more regular.

Ingredients
Juice of:
1 small red grapefruit
1 small orange
1 lime

1 frozen banana and slice of mango
1/8 cup of hemp seed
2 pitted
Date
4 icecubes
Timy pinch of himalayan salt

After tasting i added about 1/8 cup of maple sirup (the taste of grapefruit is very strong and, i find, don t alway taste good)

Quinoa salad and kidney beans


With dried tomatoes, kidney beans were marinated 2 days in in olive oil, apple cider vinager,lemon, a bit of white vinegar (could not get the taste i wanted), cilantro, basil and shallots. After tasting it right now, it could have used salt and pepper

Hawaiian Smoothie

Smoothie with:
Mango
Ananas
Date paste 
1 teaspoon of Mesquite
1/8 cup Goji berries
Cup of Silk Coconut Milk 
1 teaspoon coconut butter
Small pinch of sea salt

I discovered this milk at a friend's house and it's really good in cereals also 😊


A Little of Everything Juice


1 big Grapefruit (pink)
1 branch of fennel
1/4 of a cucumber (a little more)
2 branches of celery
1 yellow apple
1/4 cup of dill 
Half lemon
Half cup of raspberries
1/4 cup water

The King of Toast

Raw Vegan Raspberry Cheese Cake (grain free, processed sugar free)

 Found this recipe at The Clean Dish.

Very good, gave some also to a friend and she's creasy about it (and also about the raw nutella, lols) So here it is exactly like on the site, the only thing different I did was to add 1 teaspoon of coconut butter in the topping. This was really easy and tasty!


Yields: 6 dessert glasses/jars 9.8 fl oz
Prep time: 40 mins
 
Ingredients for crust
1 ½ cups of sliced almonds
2 tablespoon unsweetened coconut flakes
3 large medjool dates, pitted
½ teaspoon vanilla extract
1-2 teaspoon water
pinch of salt
 
Ingredients for Filling
2 ¼ cups of raw cashew nuts
¾ cup water
¾ cup fresh squeezed lemon juice
3 tablespoon honey or agave nectar (used Maple syrup)
1 teaspoon vanilla extract
¾ cup coconut oil, melted 
 
Ingredients for Topping
1 cup raspberries (I used frozen raspberries) - I did not
2 tablespoon fresh squeezed lemon juice
1 tablespoon water
1 cup of the filling
 
Instructions for Crust
  • Soak dates in water for about 30 mins, then chop (I used the date paste I have, like 2 big tablespoon)
  • Combine almonds and coconut flakes in a food processor and pulse until you have a crumbly texture
  • Add dates, vanilla extract, water and salt and process until well combined
  • Divide the dough between 6 dessert glasses and press to the bottom of the glass
Instructions for Filling
  • Blend cashews, water, lemon juice, honey, vanilla extract and coconut oil in a blender until you have a smooth texture. Make sure the texture is not gritty! (I decided to soak the cashews before, even if the recipe doesn't mention it, if you have a regular blender it might help you get the right texture)
  • Set aside 1 cup of the filling and divide the rest between your dessert glasses with the crust
  • Place glasses in freezer while making the topping
Instructions for Topping
  • Combine the filling that you have set aside with raspberries, lemon juice and water in a blender and blend until creamy and smooth.
  • Divide the raspberry filling between your dessert glasses and place glasses back in the freezer for 1h, then transfer to the refrigerator for another 1-2h before serving (make sure the middle is cold but not frozen or else leave in the refrigerator until defrosted).

Mushroom Zucchini , Mint & jalapano hot sauce salad

I got inspired to do this salad by a recipe called Wild Mushroom Zucchini, Mint & Chili Salad at The Rawchef.com.

2 medium coffee coloured mushroom, sliced
3 teaspoon of tamari
2 teaspoon apple cider vinegar
marinate mushroom with this while doing the rest

half courgette
half tablespoon of sunflower oil
small handful of purple basil and ginger mint, finely chopped
dash of jalapano hot sauce
a bit of lemon juice
salt (or not because the tamari in the mushrooms are pretty salty, up to you) and pepper
sprouts of broccoli and mixed thai sprouts (there is radishes sprouts in there, it makes it spicy)

Turn the courgettes into ribbons with a speed peeler into a bowl, add oil basil mint and hot sauce combine

when ready to serve add the marinated mushrooms, add chives and mix





Coconut Cherry Almond Ice Cream (Gluten Free)

I tried this recipe from Vegan Cooking, it's simply amazing! The only thing I would put less of, but only because i'm not a fan, is the almond extract.


2 cups coconut milk( I used 1 can full fat coconut milk)
3/4 cup cherries (to blend)
3/4 cup cherries (chopped)
1/4 cup turbinado sugar (i used cane sugar)
2 tsp almond extract
pinch of sea salt (opt.)
Place the cherries to blend, coconut milk, sugar, almond extract, and salt in your blender, and blend. Stir in the remaining cherries, and place into ice cream make. Follow your ice cream maker’s instructions to freeze. Enjoy :) 

Raw Nutella

Taken from The Sweet Life


UPDATE: DO NOT TRY TO DO IN HIGH SPEED BLENDER big waste of time and ingredients, just gets stuck at the bottom.

1 cup hazelnuts, soaked for 8-10 hours
1/4 cup of agave or maple syrup (maple for me)
1tsp vanilla extract
1/4 tsp sea salt
1/4 cup raw cacao powder
2-4 tbsp raw almond milk (i used more then that)

Drain and rinse hazelnuts and place in food processor or high-powered blender

Blend until smooth, scraping down the sides as needed. Depending on the strenght of your blender, this may take 10-15 minutes to get the desired consistency

Once the hazelnuts turn into a buttery consistency (as much as possible) add the sweetener, vanilla, salt, and cacao powder and blend until smooth. Slowly add almond milk until desired consistency.

Iced Mocha Green Monster Smoothie

Took this from Oh She Glows and boy it's very very good, :o)

1 cup of coffee, room temperature
1/4 cup almond milk
1 small handfull spinach
2 tbsp cocoa powder
3 large medjool dates, pitted (i used 2 tbsp of date paste)
1/2 tsp vanilla extract
10 large ice cubes

Blend until smooth, yum


Salade fouillis orange

  • finely sliced fennel (half a bulb)
  • quarter of a sweet red bell pepper
  • 1 orange cut 'supreme' style
  • orange zest or orange essence 1/4 tea spoon
  • half spoon of olive oil
  • sea salt
  • lemon juice a little bit
  • half an avocado
  • grounded coriander 1 tea spoon or to taste
  • fresh coriander 1/4 cup or to taste


if you wish (i did) dried arame soaked in water (get rid of the water after) for a bit, i've put 2 spoon of it cause I like, but start slow

Lunch Under the Sun

Plate of red and yellow tomatoes, orange pepper on a bed of lettuce (all bio) with from my balcony parsley, mint and chive simply dressed with lemon olive oil and wine vinegar and pepper and a touch of Himalayan pink salt. Also home made kimchi and Kéfir :o) yum!  - oh and one hard boiled egg

My Garden

Not going to talk long about it, but I wanted to present my garden. It's in a community garden so of course I can't have it totally bio, but i'm doing my best.
On the menu, tomatoes of all colours, tomatillos, swisschards, cucumbers,
zucchini, sweet peas, radishes, betts, eggplants

Green Smoothie - La Belle Verte (Crudessence)

For the green smoothie I made my usual and was extremely satisfied.

I did my very best to get a smooth texture using leafy green but, as many of you may know, I never really 'got it'. There was alway a couple of pieces here and there. But I got used to it and I always liked it a lot. But this, this! Heaven i'm telling you!

Ingredients

  • 3 big leaves of kale (about 75g) - didn't have any like that and used baby kale like two big handful, yum!
  • 1/2 cup of fresh parsley
  • 1,5 cup of water - filtered
  • 1,5 banana - I only put one
  • 1 cup of ananas
  • 3 tablespoon of date paste or 3 dates - don't forget to take out pit
  • 1/4 cup of shelled hemp seeds heart
  • 1/8 teaspoon of sea salt

I knew it was going to be that way but still can't
believe it, perfect texture, only pleasure in my mouth!!

First Time Peanut Butter (and peanut and pecans butter)

Now I couldn't wait to try to make peanut butter in the V machine, I saw people do it in videos but nothing beats living it!

It is absolutly increadable the time it took me to make this -
2 whole minutes!!!

What you need: peanuts, that is it, you start at level 1 and right away speed up to 10, use the pusher to bring the peanuts down. after a min the noise of the machine changes, after that as soon as you see the butter go smoothly through the blade stop (like really right away)

The recipe in the V book was for 3 cups of peanuts to make
2 and half cup of peanut butter but I didn't want that much so I did half and put it in a lovely jar (and added a tiny bit of honey - i know, not a raw ingredient - and should have put more).

I wanted to try this so much that I got myself some bread, which I don't indulge very much in. But i'll be hunting down no gluten bread i'm telling you, hahahah!

So that was last week, I gave some to my friend, hahaha she absolutely loved it and that is putting it mildly hhihi, you know who you are!!! :o)

Yesterday I wanted to make some more but realized that I didn't have enough peanuts (by the way I used plain peanuts, no salt, no nothing, the book calls for non salted roasted peanuts).

Then I thought pecans! I have to say I don't remember the portion of pecans versus the peanuts but there is more peanuts then pecans.

OMG I added a bit of honey (i know, not raw ingredient) in the jar after the deed was done. I think I prefer this!!!

So so so good!

Next time, Almond Butter, I want to see what the fuss is all about.



Vitamix!!

Ready for action!
Finally did it and got the big bad, the beast, the bomb.  Went to William-Sonoma to take a look (read touch) of all the models and finally decided for the 500 Series!

It's been seen before but here it is

It come with a recipe book (hard cover, two hundred something recipes - English and also French) and a dvd.

Now I'm not going to talk on and on about this wonderful appliance because you can find more than plenty of info, books, videos about it :o)

And the first thing I did was an easy one, a Mango Smoothie listed in the Vitamix book. D e l i c i o u s!  I did exactly like the recipe said (half a Mango, 1 peeled orange, half banana, half apple and 1 cup of ice), but in the future I would add hemp seed or chia seeds, goji berries. to get more nutriment.

Now look at the smoothness of this thing, can't wait to make a green smoothie!

Carrot and Orange Soup with Ginger

Tried another of the recipe in the V book because I wanted to try the hot soup function on the machine. I must say there is no spices in most of their recipes... Anyway, It calls for a pound of carrots,  3 oranges, 2 onions and vegetable broth (or chicken) and 2 tablespoon of butter and 1,5 tea spoon of ginger paste.

 I didn't want 5 cups of soup so I tried cutting it in half... not very successful, plus I only added water. But the point is it tasted only of oranges, not a pleasing taste when hot even if I had half a pound of carrots in there! What a waste.

Decided to make the best of it (oh and 0 texture of course, very watery) and have it anyway with blue corn chips lols.
