Lemon and Dill Zucchini Chips



I talked about this recipe a while ago but got lazy and never did it. Like I said then, i'm trying to find a substitute for vinegar chips. This recipe is from Tout Cru dans le Bec (all in French but very nice place for info) and calls for 1 or 2 big zucchini 2 table spoon fresh squeezed lemon, 1 table spoon of olive oil, 2 table spoons of fresh dill, one fresh date (or a bit of maple sirup), a bit of salt.

You put that in the mixer and then put on thinly sliced chuzhinni (I had to make more of the stuff because it didn't cover like I wanted, I ended up using 3 time the recipe). You put in the dehydrator at 115 Farenheith about 5 hours (it wasn't cruchy enough for me when i took it out, but that's a question of taste)

I had some of the liqui left so i decided to try of couple of kale also to see what the fuss is all about. It was fine but i think there was not enough of the marinade left for to taste on the kale chips.

Blueberries Chia pudding/breakfast


I made chia pudding for breakfast. That is the most easy thing to do in the world, lols. As i'm sure many of you read in other blogs or websites, Chia seeds take up to 10 times their weight in liquid. You can sprinkle it over whatever you are eating too but it s better to soak them because it will try to get the water from your body if you eat a lot in a go. You can read about this on the net i've put a wiki but there are website about this too.


I decided to add a bit of carob and cacao in my almond milk (and other spices and date paste) this week so I used it to make my pudding and added a couple of frozen blueberries and stired for a while because if you don't do this it will all stick together. This I did yesterday evening because i wanted it for dessert, but I finally decided to put it in the fridge overnight.

What I usually do in the morning during the week when I don't have time to do my smoothie is blend together whatever i want with the chia seeds and bring it to work (shaking it once in a while in the metro, you should see people looking at me funny) by the time i get there it s ready to eat :o)

I have to be really honest and say that it took me a while to appreciate that kind of pudding. I had read everywhere how wonderful it was etc. so I had big expectation when i made it... I really couldn't eat it, it was a question of texture for me and there is still a seed in there, i'm used to masticate whatever i'm eating and it s not a good idea with this if you want to like it. It s bit like tapioca but with a tiny seed inside and it can get stuck if you have spaces in between your teeth you get the picture.

But with every nutriment in this I really wanted to use it. Of course you can put it in smoothies, dehydrated craquers. What I found, personally, was that the more i put in with the seed the better i liked it (dried fruits, soft nuts, goji berries, spices, etc.). You can simply put water of course.

Juice

This morning juice of yellow apples lemon kiwi a dash of ginger juice and .. frozen bluberries!! lols because of that i chose to use mt breville, don't ever do that with a slow juicer.

Birthday juices

Hi all! Today i'm going to be at a spa downtown all day so this morning was juice time. I started by drinking water then made wheatgrass juice this the wheatgrass that i'm painfully trying to grow, this is my third time doing it, i'm getting there. I have to buy lights because there is not enough, but hey i got myself a bit of juice this morning mixed with cucumber!







Then I made a peaches, kiwi, asian pear, orange, lemon, apple and a bit of ginger juice! Delicious! Have a nice one!

Dehydrating Course tonight


So i'm just back from a 3 hour course on dehydrating at Crudessence Academy. I had already tried a couple of stuff,  but i'm happy I took the course it confirmed a couple of thing I had wondered about like time, texture and how long to keep, very interesting, and also I was putting the flex sheet on top of the screen on my trays when I was supposed to take it out, lols and I was using the sheet for my crackers and I was not supposed to.
More details about time and all that this week I'm beat, night all.

swisschard banana smoothie

this is made with the two ingredients but also home made nut milk (i ll talk about that in another post) date paste matcha powder hemp seeds sea salt a bit of coconut water fresh mint and a pinch of cayenne pepper -- and really a pinch cause i ve put more before and omg... caliente!

Dehydrated Sweet Potato Chips

I finally did the test with sweet potato, very good, I did a little vinaigrette and dehydrated for 7 hours. Delish!

Friday I went to the restaurant and I was impressed with this black olives entrée, beautiful :oD









Portobello Ricotta

Again a recipe from Crudessence, its portebello with ricotta (made with macadamia nuts) and spinach. The portobellos have been marinated with tamari, garlic, water, thyme and pepper.



Living Falafels

These are an imitation of falafels, the recepie is from the Crudessence book 'Falafels vivants'. It made with sesame seeds, Walnuts, almond jalapeño coriander and many spices, it is very very good. It s dehydrated for 10 hours at 105F
